Good Food

Nothing is simpler than a piece of hot toast topped with hummus and chili oil. My version of this classic tweaks the normal ingredients to my personal preferences.

Homemade hummus is delicious and much nicer than store-bought. Chili oil drizzled on top of hummus is a great way to add tang. Both hummus and chili oil are easy to make and you can find recipes for them anywhere.

When I make these, as I just did, I alter recipes to my taste. For chili oil, instead of using generic dried chili peppers, I use fresh habanero peppers which are very hot. Instead of using salt, I use tamari. Tamari is a special kind of soy sauce with deep, rich flavor. And instead of using ordinary tamari from a supermarket, I deploy restaurant-grade tamari from famous chef David Chang (founder of Momofuku restaurants). David recently started selling his culinary ingredients to civilians like us and they're exceptional.

For hummus, I add lots of garlic to ward off vampires. They live in my neighborhood and you can never be too safe. Extra garlic and lemon add scrumptious flavor to the chickpeas and tahini.

  1. Ha at the conversation! I know it's easy to make hummous, but I just can't be bothered. There used to be a specialty oil place here, where you could buy all kinds of infused and flavoured oils. I should try something hot for my popcorn!

  3. Mmmmm. Looks so good. Fwiw Naan freezes well and revives nicely in a toaster.

    Need to make me some chili oil too. One of my fav youtubers (Mikey Chen) is all about the hot oil.

  4. I'm doing Nutrisystem for a month and the food isn't bad, but I keep wanting foods I can't have. It's killer!

  6. That looks good! I'm realizing I far prefer fresh ingredients to dried, tinned, or canned in many scenarios, so I like that you use fresh peppers in this! I've been attempting to perfect my amatriciana and I think 9/10 people prefer canned tomatoes, but there's something about fresh ones that I just think make it so much better.

    Have you tried the Momofuku soy sauce? Wondering if it's worth it. I'm tempted to try it but not sure if I can justify the cost when I go through so much of it! - Ashley

    1. Momofuku makes great stuff and their soy sauce is good. I use it and tamari in dishes where their flavor stand out, not when it's subsumed into the overall, for the cost-reason you cite.

  9. You Culinary Jedi, thanks for all the Hummus ideas for making it fresh, I have always bought mine, but I love it so might try a go at making it fresh. I use a Vietnamese Chili Oil and I guess that would work too to drizzle?

  10. Couldn't help but crack a smile over the idea your neighbourhood being inundated with (presumably hungry) vampires.

    Hummus is such an awesome food - and a highly versatile one, too. While purists might question if it can still officially be called hummus (proper) is chickpeas aren't involved, there are many versions that channel this classic dip's spirit but use other ingredients instead (from zucchini to roasted cauliflower, edamame to sweet potatoes instead), if one is in the mood for something different or can't eat/isn't keen on chickpeas.

    Ooohh, and I'd be remiss if I didn't sing the praises of dessert hummus (particularly those involving nut butters and/or chocolate - soooo good!!!).

  11. Phwoar!!! I'm all over this. Yummy chilli hummus!!! I have enjoyed making it in the past and I really need to as I bought fresh tahini recently!
