If we have it, I like addin...I really like spinach. If we have it, I like adding a handful to the top of soup (which I DID last week). Our favourite Spinach recipe is Anna Jones' Sweet Potato and red lentil Dhal eith spinach. If you Google that, you will find the recipe. We have fantastic sport results, so maybe we are on to something. In my home town Split we have the highest rate of Olympic medal winners by person. There are also 4 NBA players from Split, not a bad number for a small city. My favourite way to eat spinach is with fresh cheese in cannelloni (sth like lasagne). Add a whole bunch of spinach, and any other greens you have (watercress, kale, lettuce), wash and roughly chop, and sauté it down into the onions/garlic a handful at a time (it'll shrink a lot). Add salt, pepper and nutmeg (about 4-5 good shakes, don't be stingy), then scrape it all into a blender and add a tub of ricotta cheese. Whirl it all together, and then separate it into about 4 equal servings (freeze some! It freezes really well). It's delicious and good for you! Shred t...My super secret spinach dip pasta sauce -<br /><br />Shred the meat from one rotisserie chicken (or use your meat of choice or go meat free if you prefer, but I like to bulk up the protein. White beans or chick peas could work too).<br />Take a jar of marinated artichoke hearts, drain and chop to your preference. I like mine mostly quartered.<br />Spinach (use as much as you feel in your heart)<br />Lots of garlic (fresh or dried), but i highly recommend dried onion flakes for concentrated onion flavor.<br />Add all this to either jarred or homemade alfredo sauce (depending on which you have time for).<br /><br />Now the two secret ingredients for the *right* taste - a healthy dose of tabasco sauce and a quarter cup of mayo (!!!) <br /><br />I also recommend thinning any jarred sauce with chicken stock, milk or cream (whatever is hiding out in the fridge) for actual sauce consistency.
