Bird In A Nest

Do you want to make something tasty, fun and easy?  It takes ten minutes and will impress your family or guests.



I made this dish Sunday night and it was a big hit.  It literally takes only ten minutes and is super easy to make with three ingredients.

You start by sauteing a little garlic in olive oil.  Then you add some butter for flavor.


Then you add handfuls of fresh spinach, stirring as they cook.


It takes only five minutes for the spinach to wilt.  Once it does, separate the spinach into little nests.  I made four.  Press down in the center of each nest and crack an egg into it.


Cover the pan and let it cook at low heat for 4-5 minutes, depending on how much you want the egg yolks to be cooked. 

Voila!  It's done!

You can season these with salt and pepper, if you wish.  Two nests are enough for a meal.

  1. this looks so delicious! i tried making the egg-in-an-onion thing that was going around the internet for a while but my eggs just seeped out. i think i cut my onions unevenly :(

  2. I made this (on toast, topped with hollandaise!) a few weeks back...but I think I overcooked the spinach because it had a REALLY weird texture. Definitely want to try again!

  3. Yum! That sounds so delicious. I usually make egg-toast (eggs-in-a-basket) a couple times a month as a meal. It's one of the few Husband-approved meals that he will consistently eat without complaint. I think spinach would be a tasty addition.

  5. Oh, I'm going to try this! I usually scramble my eggs with my spinach, but the presentation of this is lovelier. I also add a bit of grated parmesan as a topper.

  6. I love wilted spinach with a little olive oil and garlic. I also make a great tofu scramble with lots of veggies. The meals I cook are never very fancy, but that's OK. I'm more concerned about how things taste.

  9. These look so tasty! I don't like runny yolks though, but I could probably scramble them beforehand to prevent that.
